Lime Sour Cream: Stir together sour cream, lime zest, lime juice and salt.
In large skillet, heat oil over medium-high heat; sauté onion, red and green peppers, garlic, salt and pepper for 3 to 5 minutes or until vegetables start to soften. Stir in chicken and chipotle peppers; cook for 3 to 4 minutes or until heated through. Spoon chicken mixture into buns along with bacon, mozzarella and Cheddar cheese. Serve with Lime Sour Cream.
Tip: Stir some chopped fresh cilantro into the sour cream if desired.
