Preheat oven to 425°F. Whisk egg with 1 tbsp water to make egg wash; set aside. Stir together cranberry sauce, thyme, orange zest, salt and pepper; set aside. Lightly dust clean work surface with flour. Place pastry on top and cut sheet into 8 equal rectangles. Place about 1 tsp cranberry sauce, one cube of brie and about 1 1/2 tsp of turkey on one side; brush edges with egg wash. Fold over pastry to make a square turnover; crimp edges with fork to seal pastry. Brush pastry with egg wash; cut hole for venting in center of each turnover. Bake for 15 to 20 minutes or until golden brown.
