  • 1/4 cup plum, apricot or peach preserve
  • 3 tbsp. rice wine vinegar
  • 3 tbsp. soy sauce
  • 1 tbsp. corn starch
  • 3 tsp. oil
  • 1 small red onion, thinly sliced
  • 8 oz. Fresh snow peas
  • 2 (10 or 12.5 oz)cans Chunk Chicken in Water, drained
  • 4 medium plums, apricots or pealed peaches, sliced
  • Cooked rice or chinese noodles

Cook rice or noodles. Drain and keep warm. Combine and stir preserve, vinegar, soy sauce and corn starch. Heat oil and add onions. Cook for 2 minutes. Add snow pears and cook 3 minutes. Add chicken, sauce and fruit and gently blend. Once thick and bubbly; serve over noodles or rice.
