Layered Fajita Chicken Four-Bean Salad

  • 1 (19 oz.) can black beans, drained and rinsed
  • 1 (19 oz.) can chickpeas, drained and rinsed
  • 1 (19 oz.) can kidney beans, drained and rinsed
  • 2 cups trimmed green beans, cooked and cut into thirds
  • 1 cup halved grape tomatoes
  • 1 cup chopped cucumber
  • 1/3 cup diced red onion
  • 1 cup prepared Italian dressing
  • 1 (10 or 12.5 oz) can Shredded Chicken in Fajita Sauce, drained
  • 2 tbsp. finely chopped fresh parsley

In glass salad bowl, layer black beans, chickpeas, kidney beans, green beans, tomatoes, cucumber and red onion; pour Italian dressing evenly over top. Top with chicken and garnish with parsley.

Tip: Replace any of the beans with any of your favorites, such as Romano or white beans.
