Curry Chicken Tea Sandwiches

  • 1 (10 oz.) can Chicken in Curry Sauce
  • 1 stalk celery, finely chopped
  • 1/4 cup finely chopped peeled ripe pear
  • 2 tbsp. chopped dried cranberries
  • 2 tbsp. finely chopped pecans
  • 1 green onion, finely chopped
  • 1/4 cup mayonnaise
  • 2 tsp. lemon juice
  • 1/4 tsp. each salt and pepper
  • 3 tbsp. butter, at room temperature
  • 16 slices white sandwich bread
  • 8 lettuce leaves

Mix together chicken, celery, pear, cranberries, pecans and green onion; stir in mayonnaise, lemon juice, salt and pepper. Lightly butter one side of each slice of bread. Top buttered side of each of eight bread slices with lettuce leaf and chicken mixture. Cap with remaining bread. Cut away crusts from sandwiches; cut each sandwich into 4 triangles.

Tip: Recipe doubles easily depending on the size of your party crowd.
