Ingredients:

Cabbage Slaw:

  • 1 tbsp. white vinegar
  • 1 small clove garlic, minced
  • 1 tsp. granulated sugar
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1 1/2 cups shredded coleslaw mix

Lime Crema:

  • 3/4 cup sour cream
  • 2 tbsp. finely chopped cilantro
  • 1 tbsp. lime juice
  • 1 tsp. finely grated lime zest
  • 1/4 tsp. salt
  • 1/4 tsp. ground cumin

Tacos:

  • 1 (10 oz.) can Chicken in Water. Drained
  • 1-2 Chipotle Peppers in Adobo Sauce (minced)
  • 6 small corn tortillas (6-inch/15 cm), warmed
  • Lime wedges

Instructions:
 

Cabbage Slaw: Stir together vinegar, garlic, sugar, salt and pepper; toss with cabbage. Refrigerate for 30 minutes.

Lime Crema: Stir together sour cream, cilantro, lime juice, lime zest, salt and cumin.

Tacos: Assemble chicken mixed with chipotle peppers in tortillas with Cabbage Slaw and Lime Crema. Serve with lime wedges and remaining Lime Crema.
