Buffalo Chicken Sloppy Joes

  • 1 tbsp. vegetable oil
  • 1/2 onion, finely chopped
  • 1 stalk celery, chopped
  • 1 carrot, finely chopped
  • 1 red pepper, chopped
  • 2 cloves garlic, minced
  • 2 tsp. chili powder
  • 1/4 tsp. each salt and freshly ground pepper
  • 3 tbsp. tomato paste
  • 1 (14.5 oz.) can diced tomatoes
  • 1 (10 or 12.5 oz.) can Chicken in Water, drained
  • 1/4 cup Your Preferred Buffalo Sauce
  • 6 hamburger buns, toasted
  • 6 slices Swiss cheese
  • Precut vegetable sticks, store-bought
  • Prepared blue cheese dip

In large skillet, heat oil over medium heat; cook onions, celery, carrot, red pepper, garlic, chili powder, salt and pepper, stirring occasionally, for 5 to 8 minutes or until vegetables have softened. Add tomato paste; cook, stirring, for 1 minute. Stir in diced tomatoes; bring to simmer. Cook for 6 to 8 minutes or until sauce thickens slightly and vegetables are tender; stir in chicken tossed in buffalo sauce, cook until heated through. Spoon mixture into toasted buns with Swiss cheese. Serve with vegetable sticks and blue cheese dip.
